The Brewery
Grist Brewing Company is as modern as it is quaint and as innovative as it is old-fashioned. The brewery started in 2013 with the idea of only brewing classic styles but the founder, Rob Kevwitch, couldn’t resist experimenting with different flavors. His background in chemistry made him a natural and he, along with other brewers, accepted the challenge of creating unique, high-quality and sometimes quirky craft beers.
The owners are proud to use exclusively American-made equipment most of it from W.M. Sprinkman Corporation located in Wisconsin. The brewhouse consists of 20 barrels and 4 X 20 fermenters producing an impressive variety of stouts, Belgians, and ales always adding something new and spunky to the line-up. You might want to try one of their popular weekly limited-release beers for an uncommon experience.
The Taproom
The fabulous taproom at Grist Brewing Company has an industrial feel with a geometrically comfortable design. The dog-friendly space features a sizable bar area which transitions to an outdoor patio with clusters of seating arrangements all along the way. The venue sponsors trivia nights, two dollar taco specials, and keeps an assortment of board games around. It also hosts painting workshops and occasional cooking classes.
The hungry need not despair because Grist Brewing keeps a rotating roster of some of the area’s most beloved food trucks on hand. Jessie’s Smokin’ NOLA, Barbed Wire Reef for a bit of wild cuisine, or the always popular Lil Cubbys and its barbecue favorites all show up on a revolving basis. It’s a win/win for the Highlands Ranch community and the perfect place to try something new.
The Beers
The brewers at Grist Brewing Company take a two-faceted approach to beer-making and the customers are all the better for it. The core brews are categorized as Science Beers and are consistently true without any improvisation. These beers are designed to taste the same every time you order one. Then there are the Creative Beers which are special, sassy but still approachable concoctions brewed with an artisan flair.
The new second location in Lone Tree now offers experimental beers where the advantageous can sip their way through a whole new level of creative brewing. Flavors are sometimes surprising and always interesting and you might ask yourself why the world never thought key lime cream or a hint of raspberry would not be an excellent choice for beer. Grist brewing is a unique and happy destination and a Highlands Ranch gem.
